Vermicelli Noodles with Chicken & Vegetables

This Chinese-inspired vermicelli noodle dish is a tasty lunch or dinner option full of nutrients.


  • 1 chicken breast
  • 75g vermicelli rice noodles
  • 1½ cup chicken broth
  • 1½-2 cups water, depending on pot size
  • ¼ cabbage
  • 1 carrots
  • ½ onion
  • ¼ cup snow peas
  • 2 garlic cloves
  • 3 tablespoons oyster sauce
  • 3 tablespoons soy sauce
  • salte and pepper, to taste


Step 1

Place the chicken breast in a pot, pour enough water in the pot to cover the chicken breast and place on the stove over medium heat

Step 2

Bring the liquid to a boil, then reduce heat to a simmer, cover and cook until opaque throughout, 10-14 minutes

Step 3

In a second pot, bring 1½ cups of the chicken broth to a boil

Step 4

Add the vermicelli noodles to the pot once and stir for the first 2 minutes to keep the noodles from sticking -- let cook for 4-6 minutes

Step 5

While the chicken and noodles are cooking, cut the cabbage, carrot, onion and garlic into bit size pieces

Step 6

Heat a large non-stick wok over medium heat with a bit of oil or cooking spray

Step 7

Place the vegetables, oyster sauce, salt and pepper into the wok and cook until desired tenderness is reached

Step 8

Cut or tear apart the chicken into small pieces and add to the wok along with the cooked noodles and snow peas
