Red Lentils with Sweet Potato and Apricots

This Moroccan-inspired red lentil dish is sweet and delicious — kids will love the sweet potatoes with the spice mixture and that extra hit of sweetness with the chopped apricots.


  • 1 tablespoon olive oil
  • 1 cup onion, chopped
  • ½ teaspoon ground cumin
  • ¼ teaspoon ground cinnamon
  • 3 cups water
  • 1 cup red lentils
  • 1 sweet potato
  • ½ cup chopped dried apricots
  • 1 teaspoon grated fresh ginger
  • ¼ teaspoon salt
  • ¼ cup fresh cilantro, chopped (optional)


Step 1

Heat a large non-stick pot over medium heat with a bit of oil or cooking spray

Step 2

Add onion to the pot and fry until brown, about 6-8 min, stirring frequently

Step 3

Then add the cumin and cinnamon and sauté for about 1 minute

Step 4

While the onions are frying, peel and cut the sweet potato into small cubes, about ½ in size

Step 5

Add the water, lentils, sweet potato and dried apricots to the pot and bring to a boil

Step 6

Cover the pot and simmer over medium-low heat until sweet potatoes are soft, about 20 minutes

Step 7

Remove from pot and let cool for a few minutes

Step 8

Serve and enjoy!
