Chicken Meatballs with Hidden Vegetables


  • ½ cup large-flake or quick cooking oatmeal (not instant)
  • ¾ cup milk
  • 1 lb ground chicken
  • 1 teaspoon garlic
  • ½ cup carrot, finely grated
  • ½ cup chopped cooked spinach or kale
  • 1 large egg
  • 3 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 tablespoon parmesan cheese
  • salt and pepper, to taste


Step 1

Preheat oven to 350°F

Step 2

Chop garlic, finely grate carrots and set them aside

Step 3

In a small bowl, mix the oatmeal and the milk together, then let stand at room temperature until milk is mostly absorbed, about 5 minutes (can discard any extra milk)

Step 4

Mix chicken, garlic, carrots, spinach, beaten egg, half the tomato paste, parmesan cheese and oatmeal mixture and season with salt and pepper until just combined

Step 5

Form 1 inch meatballs and place on baking sheet lined with parchment paper

Step 6

Combine remaining tomato paste with the olive oil and brush on top of each meatball

Step 7

Bake for 20–25 minutes or until cooked through

Step 8

Serve with tomato sauce for dipping and enjoy!
