Cheese & Spinach Quiche

A great breakfast, lunch or dinner, this cheese & spinach quiche is packed with flavor.


  • 1 tablespoon unsalted butter
  • ½ white or yellow onion, finely chopped
  • 1 clove garlic, minced
  • 1 package frozen chopped spinach, thawed and squeezed dry
  • 1 to 1½ cups grated Gruyere cheese
  • 1 9-inch unbaked pie shell (can also split this recipe up into smaller pie shells for more personal-sized servings)
  • 3 large eggs, lightly beaten
  • 1 ½ cups milk
  • salt and pepper, to taste
  • pinch of ground nutmeg


Step 1

Preheat oven to 375ºF

Step 2

In a small skillet over medium heat, melt the butter

Step 3

Add onion and saute until translucent, about 5-7 minutes

Step 4

Add garlic and cook until aromatic, for another minute or so

Step 5

Transfer to a small bowl and let cool

Step 6

Spread onion mixture, spinach and gruyere over bottom of pie shell

Step 7

Beat milk and eggs together

Step 8

Season with salt, pepper and nutmeg

Step 9

Gently pour into crust (if necessary, place pie shell on top of a baking sheet in case of any spillover)

Step 10

Bake for 40-45 minutes, until nicely browned

Step 11

Remove from oven and let rest for 10 minutes

Step 12

Serve and enjoy!
