Butternut Squash & Spinach Lasagna

This cheesy Butternut Squash & Spinach Lasagna brings a mix of sweet and savory to the table — a definite crowd-pleaser!

Ingredients

  • For the butternut squash filling:
  • 2 cups butternut squash puree (1 small butternut squash)
  • 1 cup ricotta cheese
  • ½ cup milk
  • ¼ teaspoon salt
  • ¼ teaspoon nutmeg
  • For the spinach filling:
  • 1 cup cooked spinach (8 oz uncooked)
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese
  • 2 garlic cloves, minced
  • ¼ teaspoon salt
  • pepper, to taste
  • Other ingredients:
  • 10 oz lasagna noodles, cooked
  • 1½ cups mozzarella cheese
  • ½ cup parmesan cheese
  • Italian seasoning
  • Paprika
  • Basil

Method

Step 1

Preheat oven to 375°F

Step 2

Peel and cube a butternut squash

Step 3

Place the cubes in a pan of boiling water and boil until soft, about 15 minutes

Step 4

Drain and place cooked butternut squash in a food processor

Step 5

Add ricotta cheese, milk, salt and nutmeg

Step 6

Mix well and set aside

Step 7

Cook spinach on a pan with oil or butter until completely wilted

Step 8

Remove from heat and place in a medium bowl

Step 9

Add ricotta cheese, mozzarella, garlic, salt and pepper

Step 10

Mix well and set aside

Step 11

Bring a large pot of water to a boil and cook lasagna noodles according to package directions

Step 12

Rinse in cold water and drain

Step 13

Lightly grease a baking dish with olive oil

Step 14

Spread ⅓ of the butternut squash filling on the bottom of the dish and sprinkle lightly with mozzarella cheese

Step 15

Top with cooked lasagna noodles without overlapping (cut noodles if necessary)

Step 16

Spread half the spinach filling over the noodles and top lightly with mozzarella cheese

Step 17

Top with another layer of cooked noodles

Step 18

Spread another ⅓ of butternut squash mixture over the noodles and sprinkle lightly with mozzarella cheese

Step 19

Top with another layer of cooked noodles

Step 20

Spread the remaining half of spinach filling over the noodles and sprinkle lightly with mozzarella cheese

Step 21

Top with final layer of cooked noodles

Step 22

Spread the remaining butternut squash filling over the final layer of noodles

Step 23

Sprinkle with grated parmesan and remaining mozzarella cheese

Step 24

Generously sprinkle the cheese with Italian seasoning, paprika and basil

Step 25

Cover the baking dish with foil and bake for 30 minutes

Step 26

Remove foil and bake for an additional 10 minutes

Step 27

Let lasagna sit for 5-10 minutes before cutting into it

Step 28

Serve and enjoy!
