Blueberry Spinach Pancakes

These spinach pancakes are jam-packed with flavour and nutrients. Their funky colour is the only hint of green veggies!


  • 1 cup packed fresh spinach
  • 1 cup buttermilk (can substitute any milk)
  • 1 egg
  • 1 tablespoon oil
  • 1 cup white whole wheat flour
  • ½ cup blueberries
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 3 tablespoons maple syrup (optional)


Step 1

Puree the spinach, blueberries, buttermilk and oil in a blender

Step 2

In a bowl, beat the egg and combine with the blended mixture

Step 3

In a 2nd bowl, whisk the together the remaining ingredients

Step 4

Mix the dry ingredients from the 2nd bowl into the blended mixture until just combined

Step 5

Heat a large non-stick frying pan over medium heat with a bit of butter, oil or cooking spray

Step 6

Pour a tablespoon or two of the batter onto the frying, fitting as many pancakes as you can in the pan

Step 7

Cook until the pancake starts bubbling, about 2 - 4 minutes

Step 8

Flip and continue cooking until golden brown

Step 9

Remove from pan and top with maple syrup (optional)

Step 10

Serve and enjoy!
