Baked Broccoli Rolls

These baked broccoli rolls are packed with lots of vegetables and cheese and are sure to be a hit! Great as a snack at home or on the go.


  • 2 broccoli heads
  • 3 eggs, beaten
  • ¼ medium onion, chopped
  • ½ cup italian bread crumbs
  • ½ cup parmesan cheese, shredded
  • ½ cup cheddar cheese, shredded
  • salt and pepper, to taste


Step 1

Preheat your oven to 400°F and cover a baking sheet with parchment paper

Step 2

Grate/finely chop the broccoli, grate the cheeses, peel and chop the onion and place in a bowl with the bread crumbs and salt and pepper

Step 3

In another bowl, beet the eggs and combine with the first bowl -- mix well

Step 4

Place small rolls (cylinder shaped) onto the baking sheet, about an inch in diameter (should make about 15-20, depending on the size)

Step 5

Place in oven and cook for 10-12 minutes, flip and cook for another 10-12 minutes

Step 6

Remove from oven and let cool

Step 7

Serve and enjoy!
