Apple & Potato Pancakes

A mix of sweet and savoury, these potato pancakes are best served with unsweetened applesauce or a dollop of sour cream.


  • 2 russet or yukon gold potatoes
  • 1 apple
  • 1 small onion
  • 1 large egg
  • Salt and pepper, to taste
  • Sour cream, for topping


Step 1

Peel and core apple and peel potatoes, then place all in a bowl of cold water

Step 2

Grate potatoes, onion and apple with cheese grater or food processor, then squeeze out excess water

Step 3

In a bowl, mix the potato, apple, onion, salt, pepper and egg until blended

Step 4

Heat large non-stick frying pan over medium heat with a bit of oil

Step 5

Place ¼ cup of potato and apple mixture in the pan and flatten with a spatula or spoon for even cooking

Step 6

Cook pancakes on both sides until golden brown, 4 - 5 minutes per side

Step 7

Remove pancakes from the pan and place on paper towel to remove excess oil

Step 8

Serve with your choice of toppings -- sour cream, apple sauce, etc. and enjoy!
